RUNBOOK

  1. place filter (3-fold side toward spout)

rinse thoroughly — these filters are thick

  2. grind 42g medium-coarse

slightly coarser than V60 — like raw sugar

  3. bloom: pour 84g water, stir gently

wait 45s. the thick filter slows everything.

  4. pour to 340g in slow spirals by 1:30

keep the water level 1 inch below the rim

  5. second pour to 680g by 2:30

    maintain consistent flow rate

  6. total drawdown by 4:00–4:30

remove filter once dripping slows — don't over-extract

DIAL IT IN

the Chemex filter is 20–30% thicker than standard, removing more oils and fine particles. this gives a cleaner, tea-like body. for more body, try the half-moon filter instead.
